Tuna Steak and washing up froth

I don't have much to blog about at the moment so this will have to suffice. I was recently in Helsinki with my colleague Milly presenting to Sulake (the guys that make Habbo Hotel). It was late and we still had some work to do on the presentation so we decided to order from the hotel menu. I thought the tuna steak sounded nice...and it was but i cant hide the fact that i was a little perturbed by what can only be described as washing up froth on top of it. Needles to say, i was famished and ate it all with about two minutes. Theres nothing quite like eating gourmet food as if it was a burger.

Any comments from chefs or indeed wise finish people as to the exact nature of this substance would be much appreciated.
